Who knew that Biscotti took so long to make?! Not me! Why didn’t anyone tell me?! Any why didn’t I read the recipe all the way through? Oopsies. These log style cookies are basically twice baked, which means twice the amount of baking time needed in order for them to have the biscotti texture and taste. In my amateur baker’s opinion I found them to be nothing more than hard brownies… but I’m often critical of myself and my baking. The recipe called for two cups of chocolate chips in the dough, as well as 2 cups of white chocolate chips. When tasting these burnt logs, the white chocolate taste basically evaporated into the oven and was completely gone when I did my taste test! Disappointing!

12 Day Cookie Challenge: Cinnamon Swirl Cookies! 10/12
One word: Easy! It has definitely come to be more clear after doing this challenge that I LOVE easy cookie projects, and realizing I do not thrive off of challenging, dynamic, 22 step cookie recipes. This recipe was another simple one that I found in a bake sale book stowed away in my closet. It’s one that calls for the dough to be cooled for several hours- even better! Let me do the work for 15 minutes, then I can take a 4 hour break! Everything turned out as I hoped, too. :) I suppose the snickerdoodles I baked the other day had me on a cinnamon sugar craving which would explain why I decided to make these cookies. They kind of remind me of Sandies that you can buy in the store. Yum!

12 Day Cookie Challenge: Chocolate Mint Chip Cookies! 09/12
These cookies were definitely a fail. They may look OK in the pictures but between the mess of ingredients and weird, softy, sticky, chewy, hard, consistency they will not go down in my book as a success. They were made to be sent to one of my friends at school but I would be ashamed to send her these! They should be renamed Fail Cookies instead of Chocolate Mint Chip Cookies. Yuck!

12 Day Cookie Challenge: Snickerdoodle Sandwich Cookies! 08/12
One of my favorite cookies in the challenge so far! The moist and rich cream cheese filling pairing with the soft and sweet snickerdoodle cookies is seriously amazing! Snickerdoodle is a heavenly cookie, and to make it into a sandwich is pretty heavenly x2! I’m excited to try more variations with sandwich cookies, and even different variations with this cookie, too! Perhaps a snickerdoodle sandwich paired with chocolate, or marshmallow filling? Yum!

12 Day Cookie Challenge: Peanut Butter & Jelly Thumb Prints! 07/12
I was in the shower today and totally craved a peanut butter and jelly sandwich! So I thought, why not turn that into a cookie!? Very simple and easy, just the way I like my cookies. The cookies were NOMNOM and just a little too salty for my taste buds, but everyone else seemed to enjoy them! Yum!

12 Day Cookie Challenge: Homemade Oreo Cookies! 06/12
Smitten Kitchen offered another NOMNOMNOM recipe that I couldn’t resist to make! The ingredients in these Oreo’s were surprisingly simple. The directions asked me to take the dough and roll into the size of 1 rounded tsp! That is such a small size for a cookie, but once they came out of the oven I realized it was the perfect size for a realistic looking Oreo. Overall I should have baked them a little shorter because they were too crunchy for my liking. However, there is always the option of dunking it in milk to soften the cookie. Yum!

12 Day Cookie Challenge: Buttermilk Cookies! 05/12
A friend of mine requested buttermilk cookies so here they are! My first time making them and I mixed up the amount of buttermilk..oops! I added about 1/3 C too much of buttermilk, so it ended up making the cookies have a cake-like texture…which made them pretty popular! The glaze that’s on top of the cookies was also another mix up. I was supposed to add 3 TBS of buttermilk, but I used just milk…oops! I guessed on the amount of lemon juice to add and was curious as to how my mix ups would impact the taste of the cookie. I’m happy to announce they turned out AMAZING! The texture was unique, and the glaze was savory. Epicurious.com was definitely good to me. Yum!

12 Day Cookie Challenge: Thick Chewy Oatmeal Raisin Cookies! 04/12
By far my favorite Oatmeal Raisin cookie! These were requested by a friend after he did me a favor! I am so glad he asked me to make these, because if he hadn’t I would have never discovered this delicious recipe from Smitten Kitchen! The perfect amount of cinnamon and sugar combined with just enough raisins was impressive. This recipe is saved in my book. Yum!

12 Day Cookie Challenge: Monster Cookies! 03/12
These Monster Cookies were SO good!! My best bud Paula Deen shared this recipe with me and I have been dying to try it! They are called Monster Cookies for a reason. They have just about everything in them! There’s peanut butter, oatmeal, brown sugar, white sugar, M&M’s, chocolate chips, and probably 6 or 7 more ingredients! If you’re going to indulge with a cookie, skip the chocolate chip and have this one! The brown sugar gave a unique chewiness to the cookie, but the oatmeal allowed the cookie to be on the thicker side. Very delicious, and will never forget about them! Yum!

12 Day Cookie Challenge: Pignoli Cookies! 02/12
These cookies are one of my families favorites! Since we are an Italian family, any opportunity to taste a part of Italy is a must. The cookies were actually pretty simple to make as far as ingredients went, but with using almond paste and having to grind it that became a pain. With the help of my sister stepping in we made a pretty successful cookie, and one that was gobbled down by the rest of my family members pretty quickly. Yum!

12 Day Cookie Challenge: Nutter Butter Sandwich Cookies! 01/12
Today I decided to start a 12 day cookie challenge! For 12 days in a row I will bake a cookie that I have never baked before! The first day (today) I decided to do nutter butter cookies because they are one of my favorites to eat, but have never baked them before! The process was very simple and fun to sandwich them together. The crispy texture around the outsides of the cookie, with the soft center and mouth watering filling was what stood out for me. Next time I’d like to focus on making the cookie a little thicker, and possibly moving into square shaped nutter butters! Yum!

Pies!
My friend Kim and I dedicated a night to pie making! This was a little nerve racking for me since I have never made one pie in my life! With help from my pie making partner it was a successful evening. :) We first started off with Apple-Cranberry Pie (Yum!!!!), Key Lime Pie, and lastly Chocolate Silk! They were all uniquely delicious and I am so glad I stepped out of my baking box. Each pie had something different it brought to the palate, making each individual bite a completely new experience. Yum!!

Rice Krispie Treat Cupcakes!
Stef at The Cupcake Project is genius when it comes to cupcakes! I found this amazing idea from her site and immediately had the urge to duplicate it. Quite simple and easy, these rice krispie treat cupcakes can be made by anyone. The base is made of rice krispies, honey, and nutella which supports the mini cupcakes that are placed inside! Then, it is topped with chocolate cream cheese frosting! The skill of removing these guys from the muffin tins was the only problem I encountered. Plus, they are tastier than they look! Yum!

Princess Chocolate Cake!
I was asked to make a princess cake for a birthday party tomorrow! This is my second cake I have ever decorated and it turned out great! The tiara was the perfect topper and pulled everything together! I love the different pinks and small pearls that were meticulously placed on the cake. Overall, super successful for a beginner and I’m very proud of myself! :)
